Tasting Notes

Aromas of white fleshy peach, spring forest blossoms and flint stone, alongside notes of crushed cashews and well-integrated oak. A Chardonnay with tension, fresh flavours and acidity while also complex and showing the potential to shine with more age in the bottle.

Winemaking Style:Minimal-intervention

Harvest:Hand-harvested

Winemaking:Whole bunch pressed directly into French oak barriques and puncheons. Natural fermentation with minimal temperature control. 100% natural malolactic fermentation. 20% new barrels. Élevage for 12 months on full lees to build texture and integrated layers of flavour. Minimal sulphur added prior to bottling.

Viticulture:The grapes for this wine are from the east-facing Summit Vineyard which collects more of the morning sunlight and less of the intense, direct afternoon heat. Vineyard altitude ranges between 330m and 360m above sea level, and the soil consists of sandy loam over red-orange clay, sandstone and ironstone. Fruit for the Single Vineyard Chardonnay comes from a small section in the middle of this vineyard where the balance of topsoil over subsoil is optimal for vine balance, flavour concentration and structure.

Food Pairing:Roasted chicken with herb butter, Buttered lobster tail, Chicken Alfredo, Garlic butter scallops, Mushroom risotto, Herb-crusted cod, Butternut squash and sage gnocchi.
