What Makes a Dessert Wine Sweet?

Unlike table wines, dessert wines retain natural grape sugars after fermentation. This can happen in several ways:

  • Stopping fermentation early, leaving natural grape sugar behind.

  • Harvesting grapes very late, allowing them to become naturally sweeter.

  • Drying grapes before pressing (known as passito or appassimento).

  • Using grapes affected by noble rot (Botrytis cinerea), which concentrates sugars and flavours.

  • Selecting exceptionally ripe berries during harvest.

Importantly, sweetness doesn't necessarily mean lower quality. In fact, many of the world's most prestigious wines—including Sauternes, Auslese and Recioto—are naturally sweet.

Understanding Sweetness: Residual Sugar Explained

One of the easiest ways to understand dessert wine is by looking at Residual Sugar (RS), measured in grams per litre (g/L).

Sweet 80–150 g/L

However, residual sugar tells only part of the story.

A wine with 120 g/L of sugar can taste surprisingly fresh if it has vibrant acidity. Likewise, a wine with only 40 g/L may feel sweeter if acidity is low.

This balance between sweetness and acidity is what makes great dessert wines refreshing rather than cloying.

The Secret to Great Dessert Wines: Balance

The world's best dessert wines all share one characteristic:

Sweetness is balanced by acidity.

Think of it like lemonade.

Without acidity, sweetness becomes heavy and tiring. Acidity lifts the wine, cleanses the palate and makes you want another sip.

Other elements also contribute to balance:
