"Wines that evoke emotion" is the central pillar of Christoph Hoch's philosophy. Based in Hollenburg, a sub-region of Kremstal gifted with Champagne-like terroir rich in sedimented limestone, Christoph's wines have rapidly gained international interest within the natural wine movement. His Demeter-certified vineyards employ a blend of innovative and traditional methods to produce pure, minimal intervention Gruner Veltliner and Riesling, as well as naturally fermented sparkling wines (Pet-Nat) with aging potential and finesse. The Kalkspitz is a fresh, natural white Pet-Nat primarily made from Gruner Veltliner and Zweigelt grapes. It offers flavors of lime, green apple, buckthorn, and grapefruit on the palate. Initially austere, the wine gradually transforms into an elegant style of Pet-Nat that can be easily mistaken for a well-crafted artisanal Champagne.

Winemaking:The base wine is a blend of different varieties and vintages, and the second fermentation occurs naturally without the addition of yeast or sugar.

Viticulture:Hollenburg's vineyards feature conglomerate rock, formed from Limestone Alps sediment carried by the ancient Traisen River. This soil contains varied-sized cobbles and pebbles bound by calcium carbonate, making it calcareous and alkaline (pH 7.5).
