Tasting Notes

Wines that evoke emotion', is the pillar at the centre of Christoph Hoch's philosophy. Based in Hollenburg a sub-region of Kremstal, gifted by a Champagne-like terroir rich of sedimented limestone, Christoph's wines have rapidly gained international interest amongst the natural wine movement. Demeter certified vineyards employing a mix of innovation and traditional methods to deliver pure, minimal intervention Gruner Veltliner and Riesling as well as naturally fermented sparkling (Pet-Nat) with ageing potential and finesse. A Riesling, pure and intense. Lean, straightforward, racy acidity. Initially, the wine is austere on the palate but gradually evolves into an tangy citrus aroma, with fresh, vibrant fruit. Kumquat, lemon grass, wet stone. Mouth feeling combines subtle saltiness with an overwhelming elegance.

Winemaking:The wines spontaneously ferment in wooden barrels, with some fermenting on the mash and others being racked. Each individual lot is then matured in large, used wood casks. Every barrel is treated differently, with some undergoing oxidative aging and others undergoing malolactic fermentation. Each barrel represents its own unique project.

Viticulture:Hollenburg's vineyards feature conglomerate rock, formed from Limestone Alps sediment carried by the ancient Traisen River. This soil contains varied-sized cobbles and pebbles bound by calcium carbonate, making it calcareous and alkaline (pH 7.5).

Food Pairing:Thai green curry, Vietnamese pho, Chicken and asparagus stir-fry, Szechuan mapo tofu, Steamed mussels in white wine and garlic, Crab and avocado salad.
