Winemaking Style:Traditional

Harvest:Hand-harvest mid September, Night harvesting avoiding oxidation and high daytime temperatures.

Winemaking:The process includes a cold maceration for 2-3 days at temperatures between 8-10°C, allowing indigenous yeast to carry out fermentation for approximately 15 days, with temperatures not exceeding 28°C.

Food Pairing:Grilled rib-eye steak with a red wine reduction sauce, Venison stew, Rack of lamb with rosemary and garlic, Roast pheasant in red wine sauce, Charcuterie board with assorted cured cheeses, Cured ham and figs.
