Fermented in a mix of stainless-steel and concrete fermenters, foudre and small plastic vats. Destemmed (10% whole bunches), 6–16 days on skins, 10 months' maturation in American and French oak (10% new). Youthful and raring to go, this bursts with black cherry, black olive, vanilla pod and spice, combined with real tannic grip. Tight as a drum across the palate, finishing with a drying astringency.
