Winemaking:Whole bunch-pressed fruit underwent fermentation in French oak barriques and puncheon, fermented with indigenous yeast and a partial wild malolactic fermentation.

Viticulture:Handpicked Collection Chardonnay is sourced from the Capella vineyard on the Mornington Peninsula, a striking maritime region south of Melbourne bordered by Port Phillip, Western Port and the wild Bass Strait. Planted just five kilometres from the ocean, the 1.6 hectares of Chardonnay thrive on grey clay loam soils, cooled by constant sea breezes that preserve freshness and natural acidity. The result is a refined, site-expressive Chardonnay shaped by ocean influence, meticulous viticulture and an uncompromising focus on quality.
