Le Chevalier, introduced in 1990, ages gracefully for up to 20-24 months in barriques. Crafted from the venerable vines of Merlot and Cabernet Sauvignon, it boasts immediate and assertive ripe fruit, gently embraced by nuanced new oak, offering softness, remarkable length, and a delightful texture. The 2015 vintage's unique profile shines, revealing an astonishing interplay of bold yet delicate structure, all underpinned by a refreshing citrus vivacity. A subtle wood essence adds an embracing touch, reminiscent of mint and dill. With a potential aging window spanning from five to twenty years, Le Chevalier promises an evolving journey of flavor.

Winemaking:100% destemmed and lightly crushed. Cold maceration at 8°C for 48 hours. Alcoholic fermentation with indigenous yeast over a week. 14 days of maceration/extraction at higher temperatures to promote malolactic fermentation before assemblage.

Viticulture:20-hectare of the vineyard are located on the southern slopes of the slopes on the right bank of the Gironde River. Grape thrive in the deep-rooted clay-limestone soil.

Food Pairing:Wagyu steak, Kobe steak, T-bone steaks with herb butter, Beef fillet with morel mushroom sauce.

Perched upon one of Bayon's most picturesque hillsides, Château Falfas, stands as a testament to time, its foundations laid in 1612. In a bygone era, during the fourteenth and fifteenth centuries, this splendid estate was in the hands of the Lords of Lansac, a noble lineage loyal to the English crown. Their wines, nurtured on this very land, graced the courts of the Edwards of England. Fast forward to 2010, and Véronique, along with her dedicated team—Driss, Christophe, Pascal, Stéphanie—has taken the reins, supported by her two daughters, Annabelle and Suzanne. Their journey at Château Falfas is guided by a commitment to biodynamic farming that began back in 1988. A form of agriculture that not only cherishes the environment but also respects the plant, nature, and, perhaps most significantly, the consumer. The practice of biodynamics has gained increasing recognition, even among illustrious winemakers like Domaine de la Romanée Conti, underscoring the profound value of this approach.
