Harvest:Hand-harvested in small 15kg crates mid-September

Winemaking:Gentle pressing yields 60-65% must, followed by controlled steel fermentation at 18°C for 10-12 days. The wine matures on lees for 4-5 months to achieve complexity. In spring, fresh must from the harvest triggers natural refermentation in the bottle, creating a sparkling wine.
