Winemaking:Spontaneous fermentation with indigenous yeasts. Alcoholic fermentation for 15-days with temperature control between 24-26°C. Daily pump-overs with rack and rum are carried out, followed by a 5-day maceration on the skins.

Viticulture:Situated 1,200 meters above sea level, the terroir boasts clayey and calcareous soils. The interplay of cool nights and warm days creates a pronounced thermal amplitude, fostering optimal grape maturation.

Food Pairing:Rib-eye steak with red wine reduction sauce, Venison stew, Rack of lamb with rosemary and garlic, Pheasant breast in red wine sauce, Charcuterie board with assorted cured cheeses, Cured ham and figs.
