Harvest:Hand-harvested late-March

Winemaking:Spontaneous fermentation with indigenous yeasts. Alcoholic fermentation for 15 days with temperature control between 24-26 C. Daily pump-overs with rack and rum . 5 days maceration on the skins.

Viticulture:Situated 1,200 meters above sea level, the terroir boasts clayey and calcareous soils. The interplay of cool nights and warm days creates a pronounced thermal amplitude, fostering optimal grape maturation.

Food Pairing:Spicy beef stir-fry with peppers, Curried goat stew, Indian keema, Flank steak, Grilled sausages with polenta, Sausages and fennel, Skirt steak with farro and kale.
