Winemaking:The wine undergoes spontaneous fermentation with pied de cuve and includes malolactic fermentation. The fermentation process involves délestage 1-3 times daily for 5 days and pump-overs daily for 19 days.

Viticulture:Crafted entirely from 20-year-old Sangiovese vines, with a density of 5,000 plants/ha yielding 4,000 liters/ha, it thrives at an altitude of 450-500m on a galestro limestone slate soil.

Deep, dark and sophisticated, the 2013 Brunello di Montalcino Corte Pavone is a solid buy from this vintage. The wine opens to an inky dark appearance and a deep garnet colour. The aromas span over to black fruit, oak spice, tobacco and espresso. They definitely represent the more contemporary side of the Sangiovese bouquet. There is good textural firmness and volume here to glue all those strong flavors tightly together.
