For several years, the Fasoli brothers have been dedicated to organic farming and have supported other small farms in their transition to organic practices. As their company has evolved, they have expanded their production by collaborating with like-minded producers in the region to create new offerings, such as the elegant and beautifully presented Prosecco Frizzante, the latest addition to the 'Corte del Pozzo' collection. The bouquet is filled with the enticing aromas of white flowers, including jasmine and acacia. On the palate, it offers a creamy mouthfeel with hints of bitter almond and dried fruit, resulting in a truly successful Prosecco."

Harvest:Hand-harvested mid September

Winemaking:Grapes destemmed and gently pressed. Fermentation in steel vats for 10-12 days at 15-17°C. Second fermentation in autoclave using Charmat method for around 60 days. Lees aging for 10 days with daily stirring for enhanced body and aroma.

Food Pairing:Crab Cakes, Grilled Prawns Skewers, Prawn Pad Thai, Gnocchi with sage butter, Miso-glazed cod, Chicken Pho, Seafood Risotto, Parmesan cheese, Pecorino romano cheese.
