Harvest:The 2023 Vintage was very humid and hot for the most part with decent amount of rain falls.

Winemaking:The grapes for this sparkling wine were harvested at optimum ripeness in the cool of the night to preserve freshness, balance and fruit purity. The wine was aged seven months sur lie before undergoing secondary fermentation in stainless steel using the Charmat method, building texture while retaining vibrancy. Made from 100% organic and biodynamic Chardonnay from McLaren Vale and Verdelho from Hunter Valley.
