Tasting Notes

Stunning example of New world Cabernet Sauvignon. Fragrant aromas of wild thyme, violets and black currant are tempered with savoury black olive tapenade, tobacco leaf and a gravel dust undertone. The fleshy palate reveals maraschino cherries, cassis and graphite supported by a framework of firm but fine tannins providing length and definition to the palate.

Winemaking Style:Modern / low-intervention

Harvest:2019 was an excellent vintage for Margaret River Cabernet Sauvignon, marked by a cool, long growing season and slow ripening. The wines tend to be elegant and refined, with fresh acidity, fine tannins, vibrant fruit and excellent ageing potential.

Winemaking:Single parcels of sustainably grown fruit undergo partial wild fermentation and maturation with minimal additions. Unfined and unfiltered.

Viticulture:The fruit for the single vineyard Cabernet Sauvignon is sourced from an outstanding parcel at our Hazel’s Vineyard in southern Margaret River. The southernmost vineyard is characterised by coarse ironstone gravel loam soil, Southern Ocean breezes, a northerly aspect and plenty of Margaret River sunshine.

Food Pairing:Slow-roasted lamb shank, Filet mignon with a red wine reduction sauce, Beef Wellington, Rack of lamb with rosemary and garlic, Braised short ribs, Char-grilled ribeye steak, Blue cheese and walnut-stuffed figs.

Halliday Companion - James Halliday

From the most easterly estate cabernet block, fermented in concrete, no extended maceration, matured in barriques (30% new). Has exemplary colour for a 3yo wine, and the bouquet is expressive of variety and place. The tannins need to soften a little more, or a large chunk of flame-grilled beef should accompany the wine. Has potential.

The finely tuned 2019 single-vineyard Hazel’s Cabernet Sauvignon from the cooler southern McHenry Hohnen vineyards offers up impressive detail and poise with layers of gravel, turned earth and blackcurrant aromas, topped with cedary complexity. More earthy, mineral tones emerge on the palate well supported by a rich vein of tannins and vibrant acidity through to a composed finish. It is a bit of a sleeper and will be prime condition after another decade in bottle.

Murray McHenry, the founder, has a rich background in the wine industry and has established successful wine stores and a renowned restaurant in Perth. He began planting vines in Margaret River in 1984 and later expanded their vineyard holdings. Jacopo Dalli Cani, the head winemaker, hails from Italy and embarked on a winemaking career after graduating from the Viticulture and Oenology University of Conegliano. He gained experience in various wine regions worldwide and ultimately settled in Margaret River. His winemaking philosophy aligns with minimal intervention, crafting honest, single-vineyard wines with distinctive character. McHenry Hohnen Winery prioritizes sustainable vineyard management through ecologically, economically, and socially responsible practices. Their viticultural methods promote biodiversity within soil microbiology and attract insects and animals to healthy crops. The vineyards follow 100% biodynamic practices, which enhance soil vitality, similar to organic farming.
