Winemaking:Crafted from two blocks of Cabernet, the grapes are foot-crushed and hand-plunged during wild fermentation, then basket-pressed into old oak barrels. Here, they complete fermentation and mature for 12 months. Part of the wine undergoes re-fermentation on the skins of the air-dried Wilyabrup Bernard. Another portion is air-dried and undergoes skin fermentation separately.

Viticulture:The vineyards are situated on coastal sands and pea gravel from the nearby ridge, interspersed with small pockets of clay. Mid-row cropping with edible and flowering species is employed to enhance biodiversity.

Food Pairing:T-bone steak, Lamb shanks in red wine sauce, Barbecue spare ribs, Beef stroganoff, Venison medallions with red berry sauce, Aged cheddar cheese.
