Tasting Notes

Our mate, Stephanie the Gnome, is not too fussed about his funny name! A jolly little fellow, after a few sips he sees life through rosé coloured glasses. Stephanie is also comforted by the fact he is named after Savigny-lés-Beaune in Burgundy, a region famous for Pinot Noir, which was the main grape variety in the initial release of this wine. This is a lovely aromatic rose, light on its feet but full of comfortably recognisable character. Made in a traditional style with a not-so-traditional mix of varieties. The colour is bright pale pink. Both the nose and palate display desiccated strawberry, sugar-dusted Turkish delight, red apple skin and a hint of pear. The mouthfeel is refined and silky, slightly juicy even. Fruit is the clear hero. Finely etched acid pierces through the fruit, tightening and freshening the finish of the wine. Best drunk as a young wine to take advantage of those pretty red fruits.

Winemaking Style:Traditional

Harvest:February heat produced a fast flowering, set, and speedy berry development leading to an early veraison and the equal earliest start of vintage on record.

Winemaking:Grapes are gently crushed and undergo a small period of skin contact prior to draining off the free run juice to stainless steel vessels, where it is naturally settled and undergoes cool primary fermentation to preserve aromatics and freshness. The ferment is arrested at the desired sugar level and not allowed to proceed through malolactic fermentation in order to retain bright, natural acidity.

Viticulture:Solar power, recycling, downgauging the plastic wrapping by 70% and natural disease control. Pests and diseases are managed with careful monitoring and by reducing canopy and crop densities to minimise the use of organic fungicides and pesticides. Native plantings and insects are encouraged. Along with Australia’s First Families of Wine, committed to reducing carbon emissions and reaching net carbon zero targets by 2035.

Food Pairing:Salad Niçoise, Prosciutto and melon, Grilled prawn skewers, Bruschetta, Fish tacos, Ceviche, Caprese salad, Greek salad, Fresh fruit salad, Goat cheese and herbed crostini, Singapore noodles, Pad Thai, Thai green curry, Vietnamese fresh spring rolls, Szechuan prawns.

The Wine Front - Campbell Mattinson

Pale crimson in colour and exceptionally lively to drink. Watermelon and raspberry, ripe banana and cherry, perhaps a touch of red liquorice. Fruity! The finish isn’t overly convincing but everything about this wine is fresh, vibrant and eager-to-please.

The Real Review - Gabrielle Poy

Pale pink colour, with a pretty nose of rosehip and spun sugar. There's a spritz to the wine that enlivens the palate. Raspberries and cream flavours dominate, and it seems to finish dry (though I think there might be a little residual sugar to cushion the fall). Lovely and playful
