Winemaking Style:Low-intervention

Harvest:Low yielding clones grown at the base of the Omihi hills, facing north-west into the North Canterbury sunshine. Fruit was harvested in the cool of the early morning to retain freshness and acidity.

Winemaking:Fermented in old French oak barrels with wild yeast and partial malolactic fermentation.

Viticulture:Unique limestone conglomerate in which the vine roots grow (greystone). A limestone mix of fossils, sea shells and small pebbles that have been fused together through the seismic movement of North Canterbury. The north-facing limestone hills slope down to clay, the perfect combination for growing wines with minerality and concentration.

Food Pairing:Grilled Barramundi with quinoa salad, Goat cheese and herb salad, Grilled prawns with lemon, Kingfish ceviche, Caprese salad, Oysters, Sashimi, Gazpacho, Green Thai curry, Grilled asparagus and prosciutto.

The Wine Front - Gary Walsh

Golden colour. Pineapple, quince, brown lime and butter, frangipani and a little green capsicum. It’s rich, quite slippery in texture, but has a juicy cut of acidity, some jalapeño spiciness, a little chalkiness, and a rich lychee and spice finish of good length. Quite intense, with a lot of flavour, and quite different to your run-of-the-mill NZ Sauvignon.
