Harvest:Hand-harvested at night to avoid oxidation.

Winemaking:The fruit was crushed to both rotary and ‘sweeparm’ fermenters, the grapes were then allowed to macerate for 2 days before inoculation and fermentation. Gently pressed off skins, leaving the hard pressings fraction behind, the soft wine then went through the second malolactic fermentation under controlled conditions.

Viticulture:From Nanya Vineyard in the Riverland region of South Australia. The grapes are grown on the deep red loam over limestone soils.

Food Pairing:Slow cooked beef ribs, Mushroom veggie burger, Braised short ribs, Grilled portobello mushrooms with balsamic glaze, Blue cheese and walnut-stuffed figs
