Wine Ageing:11 months in well-seasoned French barriques

Winemaking Style:Minimal-intervention

Harvest:Hand-harvested into small 15kg crates.

Winemaking:The fruit is carefully tipped into one stainless steel fermenter, keeping the berries intact for a true carbonic maceration. The grapes are allowed to steep for seven days before a gentle press into well-seasoned French barriques where the wines mature for 11 months. A small dose of sulphur is added at blending, prior to bottling. No enzymes, no fining, no filtration.

Viticulture:Grown in the east-facing Summit Vineyard, which collects more of the morning sunlight and less of the intense, direct afternoon heat. Altitude ranges between 330m and 360m above sea level. The soil consists of sandy loam over red-orange clay, sandstone and ironstone.

Food Pairing:Wild mushroom risotto, Duck confit with cherry sauce, Roasted beet and goat cheese salad, Pork tenderloin with fig reduction, Grilled portobello mushrooms, Ratatouille, Pomegranate glazed salmon, Spinach and mushroom quiche, Black cherry glazed duck breast, Sweet potato gnocchi.

The Wine Front - Mike Bennie

Scents of sour cherry, game meat, tomato juice, white pepper. Similar to taste, a good mix of fruity and savoury, juicy texture with a little kiss of tannin and pleasing, sour cherry acidity to finish. Feels very unadorned, pure, vibrant yet with a mix of non-fruit character that is very appealing. Nice furry lick of tannin too. Yum.
