Exotic spiced aromatics jump from the glass, with nuances of eucalyptus and wild mint followed by perfumed blackcurrant. The wine evolves in the glass opening up to uncover dusty sandalwood tones and a hint of nutmeg. Medium bodied wine showing juicy blood plum skin, cumquat rind and poached rhubarb over the mid-palate. Integrated French oak lifts and lengthens the profile leading to an elegant, spicy finish.

Harvest:At Jones Block, the grapes were harvested on two separate occasions to have the best of both worlds; lifted varietal characters and acidity in the earlier harvest matched with black fruit flavours and softer tannins from the later harvest. Thomas Block was the last to be harvested as it is one of the coolest vineyards in McLaren Vale.

Winemaking:All batches were separately fermented to be blended further down the track. A little new oak in puncheon form helps to digest the chewier tannins, the rest of the wine in a combination of used French oak puncheons and barriques of varying ages for 7 months.

Viticulture:The Cabernet Sauvignon showcases a single varietal blend from our premium vineyards situated at Thomas Block and Jones Block.

The Real Review - Huon Hooke

Deep colour, good youthful hue, the bouquet savoury, warm-earthy and mellow for its age. There's good cabernet flavour underlined with firm, slightly gritty tannins. Better with food, no doubt.

Founded in 1979, it's a family-owned business. David Paxton, the founder and owner, is a highly respected viticulturalist in Australia, with over 30 years of experience in cultivating top-quality wine grapes. For three decades, the Paxton family has nurtured their vineyards in McLaren Vale, an internationally acclaimed wine region known for its superb premium wines, especially reds. In 2000, they introduced their first PAXTON-labeled wine, the 1998 Paxton Shiraz. Today, with guidance from consultant winemaker Kate Goodman and winemaker Ashleigh Seymour, Paxton produces an array of estate-grown wines that represent McLaren Vale's fruit quality, natural diversity, and varietal expression. They adopt minimal intervention winemaking to preserve the fruit's integrity. In 2005, they opened their cellar door at Landcross Farm, a historic sheep farm from the 1860s and the original village site, now open daily for tastings, events, and functions.
