A single vineyard wine highlighting the brightness of fruit using biodynamic techniques. This is really an olfactory party, there's so much going on. Bunchy characters like homemade boiled lollies, strawberry shortcakes meld with smoky speck and brooding dark musk. After some air, touches of Turkish spices hint to the delicate integration of French oak. The energy is enlivening as this wine graces the palate, long and undeviating on first taste, it fills out with a little time in the glass. Medium bodied, it feels like a juxtaposition of goats nibbling their way through brambly wild berries and mint and the tension of acrobatic tricks on a high wire. A delicate finish like sinking your toes into the smooth, fine sands of the Whitsundays.

Harvest:Grapes were hand-picked and selector harvested at optimum flavour and sugar equilibrium.

Winemaking:40% of the fruit was used as whole bunches while the remainder was delicately destemmed and fermented using 100% indigenous (wild) yeast. The small batch open ferments were carefully plunged and pumped over for 10-15 days to extract colour, flavour and tannin structure, then pressed to French oak for maturation.

Paxton is at the forefront of organic and biodynamic practices in viticulture and winemaking. All their wines originate from their estate vineyards in South Australia's McLaren Vale. Founded in 1979, it's a family-owned business. David Paxton, the founder and owner, is a highly respected viticulturalist in Australia, with over 30 years of experience in cultivating top-quality wine grapes. For three decades, the Paxton family has nurtured their vineyards in McLaren Vale, an internationally acclaimed wine region known for its superb premium wines, especially reds. In 2000, they introduced their first PAXTON-labeled wine, the 1998 Paxton Shiraz. Today, with guidance from consultant winemaker Kate Goodman and winemaker Ashleigh Seymour, Paxton produces an array of estate-grown wines that represent McLaren Vale's fruit quality, natural diversity, and varietal expression. They adopt minimal intervention winemaking to preserve the fruit's integrity. In 2005, they opened their cellar door at Landcross Farm, a historic sheep farm from the 1860s and the original village site, now open daily for tastings, events, and functions.
