Harvest:Good winter rainfall was followed by a mild start to spring.

Winemaking:The grapes were gently destemmed, the largely whole berries were cold soaked for three days before being allowed to slowly warm with the fermentation initiated by the wild yeast of the winery and then pumped over twice daily to coax colour, flavour and tannin. Once dry the finished ferment was basket pressed with the free run and pressing fraction kept separate. Maturation for 12 month in seasoned French oak preceded a careful barrel selection and blending process with minimal fining and filtration prior to bottling.

Viticulture:Sourced from our Warboys Organic Vineyard and a long-term grower.

Food Pairing:Beef Bourguignon, Beef Stew, Grilled Lamb Chops, Black Pepper-Crusted Steak, Venison With A Blackberry Reduction Sauce, Smoked Brisket, Blue Cheese Burger, Spicy Barbecue Ribs, Wild Boar Ragu, Beef Vindaloo, Chocolate Chili.

The Real Review - Aaron Brasher

Dark and plummy aromas, dried herbs, charry oak and anise. Dark and generously flavoured, juicy, plummy then some pretty dry, chalky and serious tannins kick in to give real firmness and structure. A youthful and well constructed wine.

Halliday Companion - Ned Goodwin MW

If you are after a juicy, pulpy, warm-climate shiraz with organic bona fides, here is your ticket. Purple and black fruits, star anise, orange zest and an iodine-doused note of reductive tension. Pepper across the finish and a whiff of well-handled oak.
