Harvest:The 2021 growing season was pretty good for Pinot Gris in the region. The variety benefited from good winter and spring rain, and unlike the previous few years of drought, the vines' canopy of the vines was sufficient to provide good shading of the fruit zone. This shading, whilst increasing disease pressure from high humidity in the canopy's microclimate, minimises sun exposure. The PInot Gris was harvested in 2 main lots.
Winemaking:Fermentation of the free-run juice was performed in stainless steel tanks at 14°C to maintain freshness, while aromatic yeasts were used to promote aromatics. Several blending trials were conducted to develop the best blend that displays varietal Pinot Gris characters. Filtration and bottling were undertaken in rapid succession to maximise the freshness of the wine.
Viticulture:From a Cowra, NSW vineyard planted in the mid-1990s on land which was once a free-range piggery.
Food Pairing:Grilled prawns, Gruyère and mushroom quiche, Pear and gorgonzola salad, Thai green curry, Vietnamese spring rolls, Scallops in lemon butter sauce, Summer pasta salad, Caprese poached grilled zucchini.
