Tasting Notes

Ruby red. Aromas of plum, blackberries and blueberries with herbaceous varietal cabernet notes of thyme and pepper. Lots of fresh red crunchy fruit with a palate that is full of rosemary, green pepper and dark chocolate with influences of vanilla and coconut from oak.

Harvest:The 2021 vintage and the later growing season was very cool and dry, which led to slower ripening over the season and low disease pressure. A slow and mild ripening period meant natural acidity, concentrated fruit flavour and fine tannins were seen from Temple Bruer vineyards. As a result of conditions, yields across the vineyards were also high. Picking began in late January in McLaren Vale and finished in May with Eden Valley.

Winemaking:All parcels were fermented separately with final blending post-malolactic conversion. Fermentation temperatures were kept at 18-20ºC to retain fruit freshness and gentle extraction of tannin. Once the wine completed malolactic fermentation it was blended and matured in some French and Hungarian oak. No sulphur dioxide was used at any point.

Viticulture:Grown in multiple regions in South Australia including Riverland (Loxton, Moorook, and Paringa), Langhorne Creek, Eden Valley, and McLaren Vale.

Food Pairing:Vegetable moussaka, chargrilled steak with chimichurri, roast beef with red wine jus, beef and mushroom pie, Merlot glazed pork tenderloin, beef and cheese quesadillas, marinated lamb cutlets, spaghetti bolognese, beef and pepper stir-fry, beef and chorizo casserole
