Harvest:A moderately wet spring and early growing season made the conditions excellent for flowering and fruit set across multiple regions in South Australia. The 2021 vintage and the later growing season was very cool and dry, which led to slower ripening over the season and low disease pressure. The fruit was harvested in the early mornings so that the fruit is cool to retain and maximises freshness to prevent any oxidation.
Winemaking:The fermentation commenced and was cool (18-22ºC) lasting for approximately 2 weeks before it was pressed. The wine underwent MLF, and had contact with French, American, and a small portion of Hungarian Oak. There was no addition of sulphur dioxide at any point.
Viticulture:The fruit was sourced from the Riverland, Currency Creek, Langhorne Creek and Eden Valley. The Loxton vineyard Shiraz vines were planted in the early 80’s and grown in red sandy loam soils. The Langhorne Creek Shiraz vines grow in light sandy loam, with some granite over clay. The Currency Creek vineyard is elevated and sits above the Finniss River facing north towards Mount Observation. The Eden Valley vineyard is established over granitic soils.
