Think wild red forest fruits like strawberries and barberries piled high on a creamy, crunchy pavlova. In the background, notes of raspberry leaf tea hint to the partial whole bunches used in the fermentation and completed by a feather-light touch of delicate French oak Shiraz and Grenache together make for such a dynamic blend and decadent mouthfeel. Shiraz brings the mid palate weight and intensity of fruit flavours, while the spicy liveliness of Grenache pulls everything together for a party on your palate. The finish is just like ending your night with smooth Jazz.

Winemaking:Individual vineyard parcels of Shiraz and Grenache fermented in a combination of open-top and static fermenters. During this process, each parcel was plunged and/or pumped over twice a day for 14 days, to extract colour, flavour and tannin structure. The ferments were pressed to seasoned French oak barriques (225L) and puncheons (500L).

Viticulture:The Shiraz was selected from the ‘Gateway’ and ‘Jones Block’ vineyards, renowned for producing some of the best fruit in the region. These select parcels were blended with complimentary Grenache

Food Pairing:Braised lamb shanks, Grilled rosemary chicken, Pan-seared filet mignon, Ratatouille Provençale, Beef Bourguignon, Mediterranean lamb kebabs, Coq au Vin, Sausage and peppers, Stuffed bell peppers Provençale, Herbes de Provence pork tenderloin.

The Real Review - Stuart Knox

Medium to deep ruby colour from core to rim. Lift of mulberries, charred-meat and sea-spray from the glass. Big and vibrant purple berries, smoky meats and dry herbs all showing across the palate. Good lift of brightening acidity early then firm tannins dry the medium-length finish well. A great BBQ wine, better from the Esky I’d suggest as well

Founded in 1979, it's a family-owned business. David Paxton, the founder and owner, is a highly respected viticulturalist in Australia, with over 30 years of experience in cultivating top-quality wine grapes. For three decades, the Paxton family has nurtured their vineyards in McLaren Vale, an internationally acclaimed wine region known for its superb premium wines, especially reds. In 2000, they introduced their first PAXTON-labeled wine, the 1998 Paxton Shiraz. Today, with guidance from consultant winemaker Kate Goodman and winemaker Ashleigh Seymour, Paxton produces an array of estate-grown wines that represent McLaren Vale's fruit quality, natural diversity, and varietal expression. They adopt minimal intervention winemaking to preserve the fruit's integrity. In 2005, they opened their cellar door at Landcross Farm, a historic sheep farm from the 1860s and the original village site, now open daily for tastings, events, and functions.
