Harvest:The Chardonnay was picked very early morning, using a selective MOG (material other than grapes) sorter which ensures only the best grapes make it into the winery. It was picked in two parcels from two of Temple Bruer's Riverland vineyards- Cobdogla and Loxton consecutively.

Winemaking:The grapes were quickly crushed, lightly pressed and cold settled overnight before racking the next day and fermentation commenced. This Chardonnay fermented for 2 weeks at a cool temperature of 14C. It finished malolactic fermentation then was cold and heat stabilised and bottled. No sulphur dioxide was used during the making of this wine.

Viticulture:The Chardonnay is grown at two sites in the Riverland, one in Cobdogla and the other in Loxton. The Chardonnay vines are approximately 20 years old and grown over mallee soils which consist of deep sand over lime and clay.

Food Pairing:Roasted pumpkin, BBQ Coorong mullet, grilled prawn salad, chicken caesar salad, lemon herb roast chicken, poached salmon, pesto pasta, butter poached lobster, creamy risotto, fresh crab cakes, tuna poke bowl
