Harvest:On the 2024 vintage The start of the season was therefore sluggish and somewhat hesitant, with cooler than usual temperatures. A little rainfall before the spring and then it was fairly dry, causing severe water stress even before the start of summer. A cooler start to the summer, but a heatwave at the end of the cycle.

Winemaking:The grapes are destemmed and sent to the vat with no crushing. Then the different grape-varieties are blended according to their ripeness level which we assess beforehand in the vineyard.

Viticulture:Clay-limestone on sandstone. Château Tour Boisée planted its vineyards at all cardinal points, making the most of Laure-Minervois various micro-climates. Between native and invited grape varieties, more than twenty of them grow happily on our land. From 90 to 220 m high, in a mosaic of plots made of overlapped sediments, clay and sandstone, the vineyards draw a rare water. This singularity determines all our gestures towards the soil and the plant within the frame of the organic agriculture and many other practices derived from ancestral knowledge.

Food Pairing:Beef cheek and veal blanquette, œuf en meurette, mushroom brouillade, spinach soufflé, and beef tartare.
