Winemaking:Direct pressing, slow (12h) by pneumatic press. Spontaneous fermentation in stainless steel vats with indigenous Yeasts. Aging in oak vats for 18-months.

Viticulture:Located in Ammerschwihr, on limestone-marl soil the vineyard is exclusively dedicated to Pinot Gris, with 50-year-old vines nurtured using Massale selection and a planting density of 5000 vines per hectare.
