Winemaking:Direct pressing, slow (12h) by pneumatic press. Spontaneous fermentation in stainless steel vats with indigenous Yeasts. Aging in oak vats for 11 months.

Viticulture:Situated in Ammerschwihr, on granite and limestone-rich soils the vineyard hosts a blend of varietals, with 60% Gewurztraminer, 30% Riesling, and 10% Pinot Gris. The vines, averaging 60 years in age, are cultivated using Massale selection and maintained at a planting density of 5000 vines per hectare.
