Harvest:The 2015 harvest at McHenry Hohnen broke records on various fronts. A mild and warm winter in 2014 resulted in a very early bud-break exposing sensitive young shoots to wild early spring conditions. The result was a significant reduction in yields across all varieties.
Winemaking:Single parcels of sustainably grown fruit undergo partial wild fermentation and maturation with minimal additions. Unfined and unfiltered.
Viticulture:The fruit for the single vineyard Cabernet Sauvignon is sourced from an outstanding parcel at our Hazel’s Vineyard in southern Margaret River. The southernmost vineyard is characterised by coarse ironstone gravel loam soil, Southern Ocean breezes, a northerly aspect and plenty of Margaret River sunshine.
Food Pairing:Slow-roasted lamb shank, Filet mignon with a red wine reduction sauce, Beef Wellington, Rack of lamb with rosemary and garlic, Braised short ribs, Char-grilled ribeye steak, Blue cheese and walnut-stuffed figs.
