Michel Chapoutier, an unconventional visionary, challenging tradition and passionately embracing biodynamics. Dedicated to expressing the soil's essence, his philosophy is deeply rooted in the land. Le Pavillon 2014 reveals a deep garnet red hue, illuminated by hints of purple. The nose is a captivating blend of tarry and smoky essences, weaving in notes of raspberry, blackberry, walnut, and liquorice. On tasting, its complexity unfurls with a robust start, leading into a velvety, balanced palate that lingers with hints of liquorice, tobacco, and cocoa. Depending on the vintage, its majestic evolution can span anywhere from 30 to an impressive 75 years.

Wine Ageing:The wine is matured in oak casks for 18-20 months, with an average of 30% being new casks.

Winemaking Style:Innovative

Harvest:Hand-picked grapes to small perforated boxes of 15 kg.

Winemaking:Totally destemmed, the grapes ferment in concrete tanks. From one to two daily treadings ensure a good extraction. The temperature of fermentation does not exceed 32°C. Maceration lasts between 4 and 5 weeks, to obtain a polymerization of tannins. Only the free-run wine is used for this single vineyard.

Viticulture:This plot has an area of approximatively 4 ha. It has given its name to this plot selection and has a particular geology. This soil is made up with sediments on a fine layer being on a granitic subsoil

Made from 65 year old vines on the granitic Bessards section of Hermitage. Some very assertive red plum, red nectarine and orange zest. There is a wealth of spice and dark mineral-flecked interest. The palate is extremely supple and smooth with attractive, fine-cut tannins. A long, plush and very polished dark plum stone finish.

The 2014 Ermitage le Pavillon is another wine from this team that defies the vintage. Full-bodied, concentrated, impeccably balanced and seamless, with classic notes of crushed rocks, graphite, cassis and blackcurrants, it hits the palate with no hard edges, has a great mid-palate and possesses sweet tannin. Michel commented that this wine reminded him of the 1982, and while it offers pleasure even today, it won’t hit maturity for another decade.
