"Wines that evoke emotion" serve as the cornerstone of Christoph Hoch's philosophy. Situated in Hollenburg, a sub-region of Kremstal blessed with a Champagne-like terroir rich in sedimented limestone, Christoph's wines have swiftly garnered international acclaim within the natural wine movement. His Demeter-certified vineyards employ a fusion of innovative and traditional techniques to craft pure, minimally intervened Gruner Veltliner and Riesling, along with naturally fermented sparkling wines (Pet-Nat) boasting aging potential and finesse. Rosé Rurale is a distinctive blend comprising 70% Zweigelt pressed white from the 2018 vintage, combined with 20% Saint Laurent, co-fermented on the skins, and 10% Muskat Ottonel. The entire fermentation process takes place in the bottle, with six to eight months of lees aging to achieve a harmonious balance between tannins and bubbles. This results in a fresh and fruity sparkling wine featuring aromas of ripe strawberries, blood orange, and a saline minerality on the finish.

Viticulture:Hollenburg's vineyards feature conglomerate rock, formed from Limestone Alps sediment carried by the ancient Traisen River. This soil contains varied-sized cobbles and pebbles bound by calcium carbonate, making it calcareous and alkaline (pH 7.5).
