Winemaking:Direct pressing, slow (12h) by pneumatic press. Spontaneous fermentation in stainless steel vats with indigenous Yeasts. Aging in oak vats for 11 months.

Viticulture:The vineyard is located in Sigolsheim on marl and limestone-rich soils featuring 25-year-old Pinot Gris vines. Massale selection and maintain a planting density of 5000 vines per hectare yielding approximately 30 hectoliters per hectare.
