Harvest:Hand-harvested in small 15kg crates first week of October

Winemaking:The wine is vinified in temperature-controlled stainless steel Vats, undergoing 25 days of maceration on the skins.

Viticulture:North/North-East facing, 6-8% gradient. Sandy-clay soil from Pliocene & Pleistocene. Salcheto vineyards, central to our winery's production, surround the cellar for Vino Nobile. At 350-450m altitude, they have a higher concentration of blue and gray clays, over a third of the mix.
