Tasting Notes

Complex and layered expression of Riesling with an addition of meticulously selected botrytis bunches adding apricot, orange and spice aromas to the mix. Light golden straw in colour. Expressive on the nose with lime, lemon curd and jasmine flower. The palate is defined by a long thread of complex fruits including mandarin, mango and lime zest. Balanced with natural sweetness and acidity this wine will age beautifully or can be enjoyed immediately.

Winemaking Style:Low-intervention

Harvest:Fruit was hand harvested in the cool of the early morning to retain freshness and acidity. This fruit comes from two clay blocks, one ungrafted, that provide great concentration.

Winemaking:Whole bunch pressed before vinification. Fermentations were long and quite cool between 14 and 16 degrees in stainless steel. Judiciously selected noble Botrytis bunches were Included at between 5 and 10% of the overall fruit selection. Lots were blended together after five months on yeast lees, before estate bottling without fining.

Viticulture:Unique limestone conglomerate in which the vine roots grow (greystone). A limestone mix of fossils, sea shells and small pebbles that have been fused together through the seismic movement of North Canterbury. The north-facing limestone hills slope down to clay, the perfect combination for growing wines with minerality and concentration.

Food Pairing:Grilled seafood, Sashimi, Thai green curry, Pork stir-fry, Chicken piccata, Grilled chicken with citrus glaze, Greek salad, Poached prawn cocktail, Goat cheese and herb-stuffed chicken, Vietnamese fresh spring rolls, Asparagus risotto.

Medium-dry riesling with apricot, peach, lime, grapefruit, citrus and floral rose petal. Subtle sweetness is perfectly balanced by tangy acidity giving the wine delicious tension. Smooth-textured with a lengthy finish.
