Tasting Notes

Paxton's flagship wine from vines originally planted in 1887, producing fruit of exceptional flavour and natural balance. A powerful yet graceful nose, with deep raspberry and blackberry characters, a touch of mountain pepper leaf and cassia bark add to the complexity. Full bodied wine with startling intensity yet a brightness at the same time. Elegant like slipping into a velvet suit or dress and heading to the opera in Paris. Fine, slightly chalky tannins are juxtaposed against a typically generous Shiraz mid-palate and long, lingering hints of cacao beans and roasted fennel seeds.

Harvest:Hand-picked on two different occasions to ensure perfect balance of flavour.

Winemaking:The grapes were destemmed and fermented as whole berries in small open fermenters with indigenous yeast. Delicately foot plunged daily for two weeks before soft pressing straight to elegant French oak barriques for malolactic fermentation and further ageing for 18 months. Each singular barrel was then tasted to determine the perfect blend before settling in the bottle for a further 4 months before release.

Paxton is at the forefront of organic and biodynamic practices in viticulture and winemaking. All their wines originate from their estate vineyards in South Australia's McLaren Vale. Founded in 1979, it's a family-owned business. David Paxton, the founder and owner, is a highly respected viticulturalist in Australia, with over 30 years of experience in cultivating top-quality wine grapes. For three decades, the Paxton family has nurtured their vineyards in McLaren Vale, an internationally acclaimed wine region known for its superb premium wines, especially reds. In 2000, they introduced their first PAXTON-labeled wine, the 1998 Paxton Shiraz. Today, with guidance from consultant winemaker Kate Goodman and winemaker Ashleigh Seymour, Paxton produces an array of estate-grown wines that represent McLaren Vale's fruit quality, natural diversity, and varietal expression. They adopt minimal intervention winemaking to preserve the fruit's integrity. In 2005, they opened their cellar door at Landcross Farm, a historic sheep farm from the 1860s and the original village site, now open daily for tastings, events, and functions.
