Harvest:Hand-harvest mid September, night harvesting avoiding oxidation and high daytime temperatures.

Winemaking:Cold maceration for 2-3 days at temperatures between 8-10°C, followed by native yeast fermentation for more than 15 days, with temperatures not exceeding 28°C.

Food Pairing:Elk tenderloin with juniper berries, Charcuterie board with assorted cured cheeses, Scotch fillet steak with a red wine reduction sauce.
