Winemaking Style:Traditional

Harvest:The 2022 vintage is distinguished by excellent ripeness, vibrant fruit expression, floral complexity, fine silky tannins, remarkable freshness despite the warm growing season, and strong ageing potential.

Winemaking:The grapes are fully destemmed before undergoing 1–2 weeks of maceration and fermentation using predominantly indigenous yeasts, with selected yeasts used when required. The wine is then gently pressed using vertical or pneumatic presses and matured with approximately 15–20% new French oak barrels to enhance complexity while preserving the purity of the fruit.

Viticulture:The wine is crafted from a blend of grapes sourced from approximately a dozen carefully selected Burgundy appellations. The vineyards are planted on classic clay-limestone soils, with parcels located near the upper slopes and forest line, hence the name "La Forêt," meaning "The Forest."

Food Pairing:Roasted pork tenderloin, Wild rice and mushroom pilaf, Sausage and lentil casserole, Tagliatelle with creamy wild mushroom sauce, French onion soup, Squid ink pasta.
