Harvest:Shiraz and Grenache were picked the same day in the cool of the morning. The Mataro was the last variety picked in the Riverland for the vintage.
Winemaking:Shiraz and Grenache were de-stemmed only and chilled further to cold soak for a few days to enhance fruit flavour. The fermentation commenced and lasted 14 days. For Mataro much the same fermentation conditions were undertaken as the Shiraz and Grenache. The wine then underwent malolactic fermentation and saw 20% equiv. French oak until it was blended and bottled in early July. No sulphur dioxide was added to this wine at any point.
Viticulture:Loxton North is home to a small, beautiful Temple Bruer vineyard with 50-year-old shiraz and grenache vines.
Food Pairing:Lentil and mushroom stew, lamb shoulder roast, beef bourguignon, grilled venison, BBQ spare ribs, wild mushroom risotto, spicy Moroccan lamb tagine, blackened Cajun chicken, grilled portobello mushroom burger, blue cheese and fig pizza
