Winemaking:The fruit was crushed and de-stemmed and transferred to open fermenters. After a period of cold maceration for 4 days the juice was set for fermentation with natural wild yeast. Regular hand plunging up to 18 days was carried out in the winery. The fermenting juice was then transferred into French oak barrels for maturation and to wait for secondary fermentation in the spring before bottling in the beginning of summer.
Viticulture:From the vineyards located near Nelson at the top of the South Island of New Zealand.
