What Makes Pét-Nat Different?

Pétillant Naturel, or Pét-Nat, is made using the ancestral method — the oldest sparkling wine technique in existence, predating Champagne by centuries. The wine is bottled before its first fermentation is complete, so the bubbles you are drinking are the natural result of that fermentation finishing in the bottle. No second fermentation, no dosage, no added sugars. The result is a lively, often slightly cloudy sparkling wine that captures a raw freshness you simply cannot engineer. When the grapes are also grown organically or biodynamically, that purity goes all the way down to the soil.

Castagna – Sparkling 'Allegro' Ancestrale 2018

Julian Castagna's biodynamic vineyard in Beechworth, Victoria, is one of Australia's most singular wine estates. Established in 1997 and certified both organic and biodynamic, it is one of only four Australian producers invited to join La Renaissance des Appellations, an independent group of biodynamic wine-growers.

The Allegro Ancestrale 2018 is a disgorged Pét-Nat made from 98% Syrah and 2% Viognier, and it is described by FAB as "an old-school sparkling wine crafted in a modern way". Expect a wine that is fleshy and bright, stacked with kirsch and red berry fruitiness alongside an undertow of stone fruit, a creamy texture, a sour-sweet finish, and a touch of savouriness that is unmistakably Beechworth.

Alta Alella – Cava 'Bruant' 2020

The small coastal appellation of Alella sits just north of Barcelona, set within the Serralada de Marina Natural Park where acidic, granite-based sandy soils and Mediterranean breezes create the conditions for wines of real precision and salinity. Alta Alella's Bruant is made from 100% Pansa Blanca (Xarel·lo), harvested by hand at optimum ripeness. The second fermentation takes place in bottle using the ancestral method, with the natural sugars of the must providing the bottle fermentation — no dosage and no added sulphites. The wine is aged on its lees for between 15 and 24 months, and on the palate it delivers citrus, green almond, green apple, pear, and hazelnut with persistent fine bubbles and a clean, mineral-dry finish.

Château Tour des Gendres – Pétillant Naturel Vin de France 2020

From the rolling countryside of south-west France comes this delightful Pétillant Naturel from Château Tour des Gendres. The wine is a blend of 70% Sauvignon Blanc and 30% Chenin Blanc, made without added sulphites, added sugars, or added yeasts. Its tiny bubbles carry fresh aromas of green apple and citrus zest, with low alcohol and a bone-dry, clean mineral finish that makes it one of the most effortlessly drinkable aperitifs in the collection. This is tradition-led winemaking of the most honest kind, and a perfect introduction to the style for anyone new to Pét-Nat.

Christoph Hoch – Kalkspitz NV

"Wines that evoke emotion" is the central pillar of Christoph Hoch's philosophy, and the Kalkspitz delivers on that promise completely. Hoch is based in Hollenburg, a sub-region of Kremstal in Austria, where his certified organic vineyards produce wines from a terroir of sedimented limestone that is often compared to the Côte des Blancs in Champagne. His white Pét-Nat is made primarily from Grüner Veltliner and Zweigelt, with Sauvignon Blanc also in the blend, offering flavours of lime, green apple, buckthorn, and grapefruit on the palate. Initially austere and tightly wound, the Kalkspitz gradually evolves in the glass into an elegant Pét-Nat style that can genuinely be mistaken for a well-crafted artisanal Champagne.

Christoph Hoch – Rosé Rurale NV

If the Kalkspitz is austere precision, the Rosé Rurale is pure, joyful expression. Also from Hoch's Hollenburg estate, this sparkling rosé is made from Zweigelt fermented as a white off the skins and Sankt Laurent fermented on the skins, giving the wine its blush hue and a layer of structural complexity. Aromas of ripe strawberries and blood orange lead to a palate that is bright, juicy, and light on its feet, finishing with the saline minerality that is Hoch's unmistakable signature.
