Champagne Robert Barbichon encapsulates four generations of dedication in the Côte des Bar, tending to 9 hectares of vines with unwavering commitment to biodynamic practices. Certified by Demeter in 2012 for biodynamics and holding Ecocert & AB certifications for organics, their champagne, matured for 36 months with 80% Chardonnay and 20% Pinot Blanc, unfolds with floral notes of magnolia, citrus fruits, and pears. Fragrant and lively, it dances with appealing flavors of mint and lime, a medley of white fruits, fine perlage, and well-balanced acidity, embodying the brilliance of artisanal craftsmanship.

Winemaking:First fermentation in stainless-steel vats, full malolactic followed by 10 months aging in a mix stainless-steel and neutral French oak barrel.

Viticulture:Situated near Gyé-sur-Seine on the Côte des Bar. Over a 9-hectare area of land, 17 distinct plots. Much of the clay and limestone-based south-facing vines are about 40 years old on average, with some of the oldest vines having been planted as early as 1953.

Food Pairing:Sushi, Prawn and saffron pasta, Gruyère cheese soufflé, Lobster salad, White truffle and asparagus tart, King crab legs with lemon and butter sauce, Ossetra caviar on blinis with chive and egg yolk.
