Winemaking:100% destemmed and lightly crushed. Cold maceration at 8°C for 48 hours. Alcoholic fermentation with indigenous yeast over a period of a week. 14 days of maceration/extraction at higher temperatures to promote malolactic fermentation before assemblage.

Viticulture:20 hectares of the vineyard are situated on the southern slopes of the right bank of the Gironde River. Grapes thrive in the deep-rooted clay-limestone soil.

Perched upon one of Bayon's most picturesque hillsides, Château Falfas, stands as a testament to time, its foundations laid in 1612. In a bygone era, during the fourteenth and fifteenth centuries, this splendid estate was in the hands of the Lords of Lansac, a noble lineage loyal to the English crown. Their wines, nurtured on this very land, graced the courts of the Edwards of England. Fast forward to 2010, and Véronique, along with her dedicated team—Driss, Christophe, Pascal, Stéphanie—has taken the reins, supported by her two daughters, Annabelle and Suzanne. Their journey at Château Falfas is guided by a commitment to biodynamic farming that began back in 1988. A form of agriculture that not only cherishes the environment but also respects the plant, nature, and, perhaps most significantly, the consumer. The practice of biodynamics has gained increasing recognition, even among illustrious winemakers like Domaine de la Romanée Conti, underscoring the profound value of this approach.
