Winemaking:Following a slow pressing, the juices are decanted and then fermented in Stockinger oak casks (600 liters).

Viticulture:The vineyards are situated on hillside terrain at an elevation of approximately 300 to 400 meters, from 3-plots of old vines aged between 60 and 100 years. The terroir features silty-clay soils atop the characteristic "poudingue de Jurançon," known for its abundance of pebbles and siliceous gravels.

Food Pairing:Tuna tartare, Sea bream with steamed fennel, Bouillabaisse, Grilled shrimp with curry marinade, Goat cheese and spinach stuffed chicken breast, Seafood gumbo.
