Bourdy Savagnin undergoes a distinctive and traditional winemaking process that sets it apart. The magic unfolds in centuries-old oak barrels, where the wine undergoes a long, oxidative aging period, often lasting several years. This unique aging process develops the wine's complex flavors and distinctive character. A veil of yeast, known as "flor," forms on the surface, imparting nutty, oxidative notes while preserving the wine's acidity. The result is a truly singular Savagnin that marries tradition and terroir in every sip.

Winemaking:After fermentation, it undergoes a 3-year aging process in old oak barrels. These barrels are never topped up, allowing a thin film of yeast to develop on the surface of the wine. This natural process imparts unique and distinctive flavors to the wine.
