Winemaking:The grapes are manually sorted and undergo spontaneous fermentation without malolactic processing, but with temperature control. The completely destemmed blend macerates for 5 hours, then ferments in a steel tank for 3 months at a temperature of 23°C.

Viticulture:On a steep slope at 230-240m elevation facing southeast, this vineyard cultivates 13-63 year-old Grüner Veltliner vines in slate and granite soils.

Food Pairing:Smoked trout salad with apples and walnuts, Sushi, Grilled snapper with lemon olive oil drizzle, Artichoke and spinach dip, Tofu and vegetable stir-fry, Crostini with pesto and sun-dried tomatoes, Sautéed green beans with almonds, Roasted Brussels sprouts with lemon zest.
