Cesanese yields a wine of undeniable character, a harmonious blend of balance and personality. It boasts a captivating ruby-red hue, accompanied by the distinctive balsamic notes of our vineyard. Interestingly, "Cardinale" was the primary unit of measurement established by Pope Sixtus V's papal bull to regulate wine sales in ancient Roman taverns, signifying a volume of 2 liters.

Wine Ageing:The wine undergoes a 4-month aging period in barrels, followed by an additional 2 months in bottles.

Winemaking Style:Traditional/Minimal Intervention

Harvest:The grapes are harvested during the third decade of September.

Winemaking:The winemaking process involves cold maceration at 10°C for 12 hours before alcoholic fermentation, followed by skin maceration for 22 days. Alcoholic fermentation occurs in stainless steel, while malolactic fermentation takes place entirely in barriques.

Viticulture:Located in Ardea, Rome, at an elevation of 150 meters above sea level, the vineyards employ the Guyot training system with a vine density of 5500 plants per hectare, resulting in a yield of 65 quintals.

Food Pairing:Pasta with Amatriciana sauce, Roasted lamb in tomato sauce, Bean soup, Spicy chicory.
