Harvest:Hand-picked, hand-sorted.
Winemaking:Grapes allowed to soak on skins at ambient temperatures before going through wild fermentation. Gently hand plunged each vat daily before pressing to French oak barriques after one month of maceration. Each barrel goes through a natural malo-lactic fermentation the following summer, before blending and bottling 16 months after harvest.
Viticulture:Unique limestone conglomerate in which the vine roots grow (greystone). A limestone mix of fossils, sea shells and small pebbles that have been fused together through the seismic movement of North Canterbury. The north-facing limestone hills slope down to clay, the perfect combination for growing wines with minerality and concentration.
